Evening Amsterdam lives in brown cafés (bruine kroeg) with jenever, world-class cocktail bars, craft breweries, and jazz — far from the coffeeshops and the Red Light District. Jenever tasting at Wynand Fockink, pouring since 1679, cocktails at Tales & Spirits and the speakeasy Door 74, craft beer under the De Gooyer windmill (Brouwerij 't IJ), jazz at Bimhuis and Jazz Café Alto, an indie scene and clubs in Noord. Borrel — the evening drink-and-chat ritual — picks up around 20:00, and brown cafés stay open late. Some of these places are worth crossing the whole city for, or catching the ferry to Noord.
